Ingredients (Serves 4) 410g can red kidney beans 2 cloves crushed garlic 1 finely chopped red onion 1 tablespoon olive oil 400g can chopped peeled plum tomatoes, drained 1 tablespoon Tabasco Large bunch finely chopped coriander 190g can sweet corn 150g sow fat cream cheese 8 flour tortillas Put the olive oil and the red chopped onion in a pan and stir for about 2 minutes. After the 2 minutes add the red kidney beans and the 2 gloves crushed garlic. Cook these ingredients for about 2 more minutes. Now you can add the tomatoes, the sweet corn along with the Tabasco and keep stirring for about 3 more minutes. Then add the coriander and cook all of the ingredients for another minute. While everything is cooking you can heat up the tortillas briefly. Then spread some cream cheese on each of the tortillas and put on each of the tortillas you delicious and very Mexican bean mixture. Does that not sound delicious? It is very easy to make and it does take no time to prepare and the great news is you can eat this while your are on your South Beach Diet. All the ingredients that you need are available in any grocery store, so you do not even have to waste a lot of time finding some kind of special herb or food in a specialty store. You can also use many of the Mexican spices and herbs such as cilantro, chili peppers and epazote with your favorite recipes.
