Turkey and White Bean Chili This takes 10 minutes to prep, and 30 minutes to cook.
You will need:
1 tbsp extra virgin olive oil
1 medium onion, chopped
2 minced garlic cloves
1 pound turkey cutlets, cubed
1 tbsp chili powder
1 tsp ground cumin
1 15oz can canellini beans, drained
1 15.5oz can diced tomatoes
1 cup low sodium chicked broth
Salt and Black pepper
Heat oil in saucepan over med-hi heat. Stir in chopped onion, cooking until softened, then add garlic and cook about one minute. Add turkey cubes, chili powder and cumin, cook until the turkey isn't pink.
Add beans, tomatoes, broth and juice, and bring to a boil. Lower heat to med-low, cover and simmer about 1/4 an hour. Use salt and pepper to your liking.
Yeilds 4 (1 1/4cup servings)
Feel free to change up the ingredients to make a new meal. Exchange turkey for chicken and use black beans, etc. Tantalizing Chocolate Dipped Apricots You will need:
1/2oz bittersweet chocolate
6 apricots, dried
1/4 tablespoon chopped nuts (optional)
Microwave chocolate on high about 2 minutes, stirring halfway through. Make sure it's completely melted, and dip the apricots halfway in the chocolate. Let excess drip off and then roll in nuts. Cover the apricots with waxed paper and refridgerate until chocolate is cool and set.
